Spices are the main flavor of the food. Without spices, the food is tasteless. Spices are used to the flavor, color and taste. Spices are multipurpose, used for the medicinal, perfumery as well as in cosmetic products. There are a variety of spices is available, like pepper known as a king of spices, Cardamom as a Queen of spices, chilies, ginger, cumin, coriander , etc.,… Most of the spices are grown in specific seasons and vast quantity of spices are stored for a long time and for that spices packaging is required.
Spices are derived from the different parts of the plant like leaves, bark, flowers, roots, seeds, fruit etc. It has a good anti-oxidant and preservative properties. It also has an anti- microbial and antibiotic properties that’s why it is used for medicinal purpose .Spices has a strong smell, to preserve this smell for long time direct contact with the air is requires. Some spices have an oil inside, which is the characteristics of the aroma , which is a loss because of the oxidation, so protection is required. Some spices like green cardamom requires protection against the light which affect the color of spice.
